Golden Macaroons (I got this years ago from HA)
1 C grated raw carrots, packed (I use pulp)
1/2 C water
1/3 cup sweetener (honey or maple syrup)
1 1/2 C coconut
1 cup oat flour (You can blend dry oats to make flour)
1/2 t salt (opt)
1 t vanilla
Mix well. Let sit 10 min. Firmly pack dough into a tablespoon and drop on an oiled cookie sheet. (I usually just pack it into an oiled 9 X 12 pan and cut it later).
Bake at 325 for 30 minutes (up to 45 if using the pan)
